Sunday Farmhouse Supper – April 1st

More than a few years ago, we got a call from Carol Field, a great Italian cookbook & culture writer. She wanted help in finding some farro from the Garfagnana, because, as she put it, “it’s the best farro”. The Garfagnana is a region within the province of Lucca, in Northwest Tuscany. It borders the Alps, and the Apennines, is mostly forest, very beautiful, and known for farro, chestnuts, and wildness. We once had pigeon near there that was delicious, but required a good deal of spitting out bird shot. Oliveto’s pigeon is from our trusted metal-free pigeon producer in Sonoma, Phillip Paine.
Here is this Sunday’s Farmhouse Supper menu – served family style:
We’ll start with Acquacotta “Stone soup”
Followed by a Chestnut flour Tagliatelle with pigeon ragú
Roasted pigeon with Garfagnanan farro and served with contorni
For dessert: Hazelnut crusted ricotta crostata with Alpine Farm blueberry compôte

For groups of one to twelve. Whole table must order prix fixe menu. A regional wine will accompany the meal at $40/per bottle.
