Oliveto is proud to offer a special bottling of a very old (extra vecchio) Aceto Balsamico, 26 years in process. This rare vinegar was personally selected by Paul Bertolli this fall in Spilamberto, Italy from the Azienda Agricola Agapito Cocchi. Agapito Cocchi, himself a master taster for the consortium of Balsamic vinegar of Spilamberto, says of this vinegar, "After the must from Trebbiano di Spagna grapes in the middle of our Emilian autumn, has been filtered and allowed to cool, it is poured into the barrel set for the new production. Thereafter, each year it is transferred from one barrel set to the next, from the sixty liter oak barrels to reach, after twenty five years, the twenty liter juniper casks."
Dark and dense, with intriguing cherry, oak and juniper notes, sweetly mellow with a spike of acidity; Perfectly balanced. Delicious with ripe pears, ricotta cheese, avocado; on gamebirds, prime cuts of meat, and white fish such as sole.
Vinegars of this quality normally sell for $125 and up. Because we were able to purchase the vinegar without the additional cost of the consortium label and bottle we pass the savings on to you.
