Oliveto's Twelfth Annual Truffle Dinners

Truffle and Mushroom Dinners kick-off next week (November 18-21) and Chef Canales has been busy working to finalize the menu. He shared a few of the new dishes he is especially excited about for this year.

Some new items for the 2008 Truffle Dinner menu:
Pan d'mie crostini with wild snails, wild mushrooms, and leeks
Warm salad of lamb sweetbreads, artichokes, cauliflower, and black truffles
Minestra bianca of shellfish, soft herbs, and egg yolk
Sugar Pie pumpkin sformatino with castelmagno cheese and chives
Spezzatino of Magruder Ranch vitello in bianco with butternut and cauliflower crochetta
Local Petrale sole with wild mushroom riso and parmesan zabigone
Polentina of savoy cabbage and leeks with polpettini of McGruder Ranch milk-fed vitello tongue, jowls, and pork liver
Ravoli of Spiny lobster and lobster roe
Papardelle with braised leeks vellutata
Buttercup squash gnocchi with Bay scallops and sage
Fried Paine Farm pigeon stuffed with black truffle butter all'Escoffier
Preserved Hoffman Farm Hen with truffled tonnato, cardoon, and celery heart
Violino di Chiavenna e salsiccia Vicentina cruda: prosciutto of Watson Farm lamb seasoned with juniper and red wine, fresh spiced sausage, white truffle, prosciutto grissini, and porcini mushroom conserva
The truffle dinners are the perfect complement for much of what we have been purchasing for our old-wine program, Wine in Time, as well as for many northern Italian wines on our regular wine menu. This year we are excited to offer verticals of moderately priced, aged Barolos and Barbarescos.
As always, we will offer a unique list of wines by the glass for the truffle dinners.
A special corkage fee of $25 will apply during these nights.
